Chicken breast has plenty of proteins. This recipe is full of nutrition and easy to cook. Here’s a colorful recipe which is for all the fitness lovers.
Ingredients
For Spinach & Mushroom stuffing:
- 1/2 cup spinach (blanched, finely chopped & water squeezed out)
- 1/2 cup mushrooms (blanched & finely chopped)
- 2 garlic cloves (finely chopped)
- 1/2 cup sweet potato cheese
- Salt & pepper to taste
For chicken breast seasoning:
- 2 tsp Olive oil
- 1 tsp Italian seasoning
- 1 tsp Paprika
- 1 tsp Garlic powder
- 1 tsp Lime juice
For Sweet potato cheese:
- 2 large sweet potatoes
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp crushed black pepper
- 1/2 cup milk
- 1/2 tsp paprika powder
- Salt to taste
For garnishing:
- Sprinkle some fresh basil leaves.
How to Prepare:

- Cut the mushroom; put the chopped mushroom into the warm water then leave for 15 minutes.
- Second step is to boil the spinach leaves for about 5 to 10 minutes and follow the same for sweet potatoes.
- To make cheese with the sweet potato, put all the ingredients in a mixer and blend it properly for 15 to 20 minutes.
- In a medium sized bowl, mix together all the stuffing ingredients. Set aside.
- For the chicken, use a paring knife to cut a slit into the thickest part of the breast to create a pocket.
- Place onto a parchment lined baking sheet and season the chicken with olive oil, Italian seasoning, garlic powder, lime juice & paprika.
- Stuff each pocket with 2-3 spoonful of the filling. In a grill pan, cook the chicken for 25-30 minutes or until chicken is cooked and turn golden.
