So let’s get started.

1. Chevda Dalmoth

This savory snack is made with beaten rice called Poha. This is a very good option for evening snacks. It is normally deep fried but we will roast it in oven or in a heavy bottom kadhai to have all the goodness of poha intact along with taste and not transfats whatsoever.

Ingredients

  • 4 cups flat poha
  • 1 teaspoon coconut oil for seasoning
  • 1/2 tbsp raai( mustard seeds)
  • 4 to 5 green chilies (slit into halves)
  • ½ cup peanuts
  • ¼ tsp hing (asafoetida)
  • Handful of curry leaves
  • Salt to taste
  • 1/4 chaat masala
  • ½ tsp Turmeric powder
  • ½ tsp red chili powder (optional)
  • 1tbsp shredded coconut

Method

Firstly, roast poha till it becomes flaky. To check if it is done or not just crush it and see.

When roasting in oven, keep mixing it every 15 seconds else it might get burnt.

Now, Heat coconut oil in a pan. Add green chilies and raai. Fry till chilies are crispy.

Add peanuts and fry for a minute. Add heeng, curry leaves and saute for few seconds.

Place the roasted poha in a bowl, and add salt, chaat powder, powdered sugar, turmeric powder and red chili powder to it.Once done, add the seasoning to the poha mixture n mix it well with a light hand till every ingredient is incorporated and mixed properly.

Cool and store it in an airtight container.

Now mix the grinded nuts to the dates paste and once it comes to room temperature start making laddus. Garnishing is optional. If you wish, you can garnish the laddus with roasted and grinded nuts.
