Banana Egg Pancakes

The 3 ingredients pancake. Yes! This pancake is made with banana, egg and oats. This recipe produces a great breakfast food for those of us who don’t generally like to eat eggs in breakfast.

Banana Egg Pancakes

This 3- ingredient pancake is quick and healthy, protein- packed breakfast recipe to give plenty of energy in the morning. I added blended oats in the combo of banana, eggs and cinnamon and… Voila! These banana oatmeal pancakes were born. In this you can use gluten free oats if you want them to be gluten free pancakes.

The texture is definitely a little different to regular pancakes because of the high egg content and lack of raising agent. But with almost 4 grams of protein per pan cake, this recipe produces a great breakfast food for those of us who don’t generally like to eat eggs in breakfast.

Ingredients

1 medium ripe banana

4 eggs

½ cup oats

¼ tsp cinnamon

Instructions

  1. Put one banana in a bowl and mash with a fork
  2. Add 2 whole eggs and 2 egg whites, mix thoroughly
  3. Put the oats in a blender and blend until the mixture is fine
  4. Add the blended oats and cinnamon to banana mix and stir well
  5. Heat a skillet over a medium heat with a dash of vegetable oil
  6. Pour ¼ cup of the mixture into the skillet, cook on one side for about 1.5 minutes, then turn and cook on the other side for about 1 minute (or until golden brown on both sides)
  7. Serve with peanut butter spread and enjoy.

PS: While you are preparing the mixture, you can add a scoop of protein powder to increase your protein intake.
