The salad makes a nutritious and tasty meal. For the health and fitness conscious people, it has enough fiber, vitamins and minerals balanced with appetizing tasteful ingredients.
Ingredients
- 1/2 cup quinoa
- 1/2 cup millet
- 1/2 cup amaranth
- ¼ cup watermelon
- ¼ cup boiled black beans
- 1 Yellow bell pepper
- ½ orange
- 1/4 cup lime juice
- 6 tablespoons apple cider vinegar
- 6 tablespoons olive oil
- 2 tablespoons English mustard
- 1 pinch salt
- cracked black pepper (fresh)
- Parmesan Cheese
- Lettuce leaves
Preparation

Dressing
- In a bowl, mix lemon juice, mustard, 3 tbsp of vinegar, and olive oil.
- Adjust the seasoning (salt and pepper) and keep the dressing aside.
Salad
- Rinse the grains with cold water and drain. Add them to 2 3/4 cups of water and bring to a boil.
- Cut the watermelon and take out the wedges of orange.
- Slice the bell pepper, add to a bowl with the boiled black beans and all the other grains
- Roughly chop the lettuce leaves and toss in your salad.
- Add the dressing and it before you eat
