Ancient Grain Salad by Chef Sadaf Hussain

This ancient salad is full of nutrition rich whole grains which will help you stay healthy and satisfy longer.

The salad makes a nutritious and tasty meal. For the health and fitness conscious people, it has enough fiber, vitamins and minerals balanced with appetizing tasteful ingredients.


  1. 1/2 cup quinoa
  2. 1/2 cup millet
  3. 1/2 cup amaranth
  4. ¼ cup watermelon
  5. ¼ cup boiled black beans 
  6. 1 Yellow bell pepper
  7. ½ orange 
  8. 1/4 cup lime juice
  9. 6 tablespoons apple cider vinegar
  10. 6 tablespoons olive oil
  11. 2 tablespoons English mustard
  12. 1 pinch salt
  13. cracked black pepper (fresh)
  14. Parmesan Cheese
  15. Lettuce leaves 



  1. In a bowl, mix lemon juice, mustard, 3 tbsp of vinegar, and olive oil.
  2. Adjust the seasoning (salt and pepper) and keep the dressing aside.


  1. Rinse the grains with cold water and drain. Add them to 2 3/4 cups of water and bring to a boil.
  2. Cut the watermelon and take out the wedges of orange.
  3. Slice the bell pepper, add to a bowl with the boiled black beans and all the other grains
  4. Roughly chop the lettuce leaves and toss in your salad.
  5. Add the dressing and it before you eat
